Grade: Grades are exceptional coffees. Blue Mountain from Jamaica is a well-known grade, but there are many others. Almost every coffee producing country has its own grades. Yemen and Ethiopia still supply exceptional Mochas. Indonesia also offers its own celebrated coffees, as does Hawaii, Costa Rica and East Africa.

Grind: The process by which we reduce coffee beans to a more or less fine powder. Each type of coffee maker requires its own grind; therein lies the key to a good cup of coffee. For best results, the beans should be ground only at the moment of preparation.
