S

Selection: According to their quality, coffee beans are classified by grade and name. Coffee companies base their selection process on rigorous standards before committing to a harvest. Before the company makes a final decision, a systematic tasting session usually takes place.

Sorting: Sorting occurs after gathering and processing. It helps remove any debris, to locate peaberries, and to arrange the beans by size.

Strong: Coffee made with a higher concentration (more coffee for the same amount of water), producing a more pronounced flavor and a heavier body. Not to be confused with bitter, which also presents a more pronounced flavor. However, bitter coffee is often due to over-extraction of the flavors when not enough coffee is used.
